If I didn’t cheat eat every day of my life, Sunday would be my cheat day. Sunday is my favourite day of the week because everything seems to happen much more slowly. From getting out of bed in the morning and long lunches in the afternoon – Sunday is the day to take out time to enjoy the little things.
One little thing that makes me happy is baking and cookies. Therefore, Sunday + chocolate chip cookies = the perfect combination. As Sunday is a lazy day, this recipe is for lazy bakers, only needing simple ingredients and one bowl to pull it all together!
The Ingredients //

The Method //
Preheat the oven to 180’C.
Cream the butter and sugar until pale, light and fluffy. Add the vanilla and beat in the egg.
Sift together the bicarbonate of soda and flour, slowly fold this into sugar & egg mixture
Once all of this has been combined, cut up your dark and milk chocolate (white chocolate could also be added to this mixture) and halve your preferred nuts (I have a mixture of hazelnuts and macadamia) and gently work these throughout the dough.
Once the chocolate chip dough has been made, spoon out 12 balls and place them on a baking tray. Bake for 20 minutes until golden brown, allow to cool for 10 minutes. Viola!
