Zesty Dark Chocolate Biscotti

Anything chocolate with a little bit of orange is a good thing. Put the two together in a biscotti? you’ve got one great thing going. I love all things Italian (especially their food) so I decided to try out their ultimate biscuit – biscotti. This recipe has my FAVOURITE flavour combination – chocolate and orange. It can be changed up with anything you like though! Think white chocolate and cranberries / roasted almonds and lemon zest / cinnamon and coffee.. they are the perfect treat for dunking into your morning coffee!

*I’ve always used an American recipe and I’m a little too lazy to change it all to grams. (In my defence, using cups and spoons is a lot more fun than using a scale!)

1 cup all-purpose flour
1T cocoa powder
Pinch of salt
1t baking powder
1 egg
1 egg white
½t vanilla essence/paste
8T brown sugar
Zest of 1 orange
100g dark chocolate

Preheat your oven to 180’c
Grease your baking tray and set aside.
Sift the flour, salt, and baking powder together in a large bowl. Add in the chopped chocolate and the zest of one orange.
In another bowl – beat the egg, egg white, orange zest, and vanilla until a soft dough forms. Beat for a good few minutes.
Add the brown sugar and beat again.
Pour the wet mixture into flour mixture and mix until all the ingredients are incorporated.
Use spatula to transfer dough to the baking sheet. Form two “logs” of dough down the baking tray.
Wet your hands with water and gently press the two logs down.
Bake for 15 minutes.
Remove the biscotti from the oven and allow to cool down slightly (cutting the biscotti into slices while the logs are still warm will be a lot easier.) The slices should be about 1cm thick.
Put the slices back into the baking tray and bake for another 10 minutes.
Turn the biscotti over and bake the other side for about10 more minutes.

Allow to cool and enjoy!
