After a two month long holiday of laying in the sun and doing absolutely nothing, I am officially starting at my new college tomorrow! I’m so excited to start a routine and get back into working mode again, yet I have done little to zero preparation to get there. Holiday + summer = one hell of a distraction.
My mind is currently running wild and I’m in full list making mode – fill up my car with petrol, go stationery shopping, get a haircut, go to the gym, get a lush bath bomb (the most important of ’em all) and of course, make a car playlist for the morning sommute. So what did I decide to do to make sure I’m ready for college tomorrow? Bake, of course. The best kind of procrastination there is, procrasti-baking, if you will.
So here is my latest kitchen experiment (still trying to keep it healthy with no refined sugar, it is January and the new year after all) – Raw Chocolate Tahini Fudge.
It’s seriously, seriously good. The same consistency and texture as sugar loaded fudge but with more depth of flavour and a lil’ healthier too. Here’s to nutritious treats and me getting my life organized before 9am tomorrow! (Please excuse how wonky I cut the fudge, it was tricky and I’M UNDER PRESSURE OKAY!?)
– 2T tahini
– 2T almond butter (or any other nut butter you prefer)
– 4T coconut oil
– 3T raw cocoa powder
– 1t cocoa nibs
– 2t xylitol
– 30ml honey
Melt the honey and coconut oil together over a low heat.
Add all of the other ingredients and continue stirring over the low heat, ensure the oil is well mixed and all the ingredients have been combined.
Pour the mixture into a small container that is lined with cling film/tin foil/wax paper and place in the freezer for 2 hours before slicing the fudge into squares.
Store the fudge in the fridge and enjoy!
